Specialist butcher announces expansion

Specialist venison and game butchers Midlands Wild Meat has announced it is to start supplying restaurants and pubs.

Since launching in December, the business has successfully built up a retail customer base.

Now, the company, which sources its venison from well-managed, wild populations, is looking to diversify its clientele.

According to the business, venison is regarded as a highly sustainable and ethical source of meat, which is low in fat and cholesterol, while high in protein.

The firm’s Derby butchery is already certified by the Organic Food Federation and is planning to become fully SALSA accredited by the end of the year.

In a statement, it said: “Here at our butchery in Derby, we are passionate about traceability from forest to fork.

“We are throwing a challenge to all Derby and Derbyshire chefs to produce a new dish choosing our highly sustainable and ethically sourced meat, which is low in fat and cholesterol while being high in protein.”
